Instructions

In a bowl, whisk together the eggs, unsweetened dairy-free milk, salt, and black pepper until well combined.

Heat the olive oil in a non-stick pan over medium heat.

Add the cooked shredded chicken and cook for 1-2 minutes until heated through.

Add the spinach and cook, stirring, until just wilted, about 1-2 minutes.

Pour the egg mixture into the pan. Reduce heat to low and stir gently with a spatula, scraping the cooked portions from the bottom and sides, allowing the liquid egg to flow underneath.

Continue cooking and stirring until the eggs are mostly set but still slightly moist.
