High-Protein Scramble with Sweet Potato, Spinach & Mushrooms

Chicken Breast50 g
Sweet Potato50 g
Spinach50 g
Mushrooms50 g
Onion25 g
Olive Oil2.5 ml
Salt1 g
Pepper1 g
Garlic Powder1 g

Instructions

Dice the sweet potato into small, 1 cm cubes (3 minutes). Finely chop the onion (1 minute). Slice the mushrooms (1 minute). Roughly chop the spinach (0.5 minutes). Dice the chicken breast into small pieces (2 minutes).

Heat 5 ml of olive oil in a non-stick pan over medium heat (0.5 minutes). Add diced sweet potato and cook for 5 minutes until slightly tender, stirring occasionally.

Add chopped onion to the pan and sauté for 2 minutes until softened. Add sliced mushrooms and cook for 3 minutes until browned.

Add diced chicken breast to the pan and cook for 5 minutes, stirring until browned and cooked through. Season with 2g salt, 2g pepper, and 2g garlic powder.

In a separate bowl, whisk 5 large eggs. Add the spinach to the pan and cook until wilted (1 minute).

Pour the whisked eggs into the pan with the vegetables and chicken. Scramble the eggs, stirring gently, until cooked to your desired consistency (3 minutes).
