Instructions

Slice the spring onion. Wash the spinach. Toast the whole grain bread.

In a bowl, whisk together the whole eggs and egg whites with a pinch of salt and pepper.

Heat olive oil in a non-stick pan over medium heat. Add the spring onion and sauté for 1 minute until fragrant.

Pour in the egg mixture and cook, stirring gently, until scrambled to your desired consistency (about 3-4 minutes).
