High-Protein Scramble with Smoked Turkey, Spinach, and Avocado

Eggs3 g
Smoked Turkey Breast40 g
Spinach50 g
Avocado40 g
Olive Oil4 ml
Onion20 g
Garlic4 g
Salt1 g
Black Pepper0.5 g

Instructions

Finely dice the onion and mince the garlic. Roughly chop the spinach. Dice the avocado.

In a medium non-stick pan, heat 4 ml of olive oil over medium heat. Add the diced onion and minced garlic and sauté for 2 minutes until fragrant.

Add the chopped spinach to the pan and cook for 1 minute until just wilted.

In a bowl, whisk the eggs with salt and pepper. Add the smoked turkey breast to the pan with the vegetables.

Pour the whisked eggs into the pan. Stir gently and cook for 3 minutes, scrambling until the eggs are set but still moist.

Remove from heat. Divide the scramble between two plates and top each serving with diced avocado.
