High-Protein Scramble with Cottage Cheese & Summer Vegetables

Egg White200 g
Cottage Cheese100 g
Bell Pepper70 g
Spinach70 g
Olive Oil7 g
Apple100 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Finely dice the bell pepper. Roughly chop the spinach.

In a bowl, whisk together the eggs and egg whites. Season with salt and pepper.

Heat the olive oil in a non-stick pan over medium heat. Add the diced bell pepper and sauté for 2-3 minutes until slightly softened.

Add the spinach to the pan and cook for 1-2 minutes until wilted.

Pour the egg mixture into the pan. As the eggs begin to set, gently push them from the edges towards the center. Continue cooking for 2-3 minutes until mostly set but still slightly moist.

Stir in the cottage cheese until just combined.

Serve immediately with the fresh apple on the side.
