Cottage Cheese100 g
Spinach100 g
Onion30 g
Olive Oil7 ml
Whole Grain Toast30 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Finely chop the onion and roughly chop the spinach.

In a bowl, whisk the eggs with a pinch of salt and pepper.

Heat the olive oil in a non-stick skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.

Add the spinach to the skillet and cook until wilted, about 1-2 minutes.

Pour the whisked eggs into the skillet. As the eggs begin to set, gently fold in the cottage cheese.
