High-Protein Savory Tofu Scramble with Spinach and Herbs

Ingredients (Serves 2)

Tofu175 g
Olive oil7 ml
Onion40 g
Garlic5 g
Spinach75 g
Nutritional yeast5 g
Turmeric1 g
Salt1 g
Pepper0.5 g
Parsley5 g

Instructions

Drain the tofu and press it gently to remove excess water (5 minutes). Crumble the tofu into small, irregular pieces using your hands or a fork.

Finely chop the onion and mince the garlic (3 minutes). Wash and roughly chop the spinach (2 minutes).

Heat the olive oil in a large non-stick pan over medium heat (1 minute). Add the chopped onion and sauté until softened, about 3 minutes.

Add the minced garlic and cook for another 1 minute until fragrant.

Add the crumbled tofu to the pan. Sprinkle with nutritional yeast, turmeric, salt, and pepper. Sauté, stirring occasionally, for 4 minutes until the tofu is heated through and slightly browned.

Stir in the spinach and cook for 2 minutes, until wilted. Remove from heat.

Chop the fresh parsley and stir it into the scramble before serving (1 minute).
