High-Protein Savory Rice and Chicken Patties with Fried Egg

Ingredients (Serves 2)

Cooked brown rice250 g
Cooked boneless, skinless chicken breast150 g
Large eggs4 pcs
Bell pepper (any color)80 g
Onion50 g
Garlic powder5 g
Smoked paprika3 g
Salt2 g
Black pepper1 g
Olive oil20 ml

Instructions

Finely chop the bell pepper and onion.

Shred or finely chop the cooked chicken.

In a large bowl, combine the cooked brown rice, shredded chicken, chopped bell pepper, chopped onion, garlic powder, smoked paprika, salt, and black pepper.

Add 2 of the large eggs to the mixture and mix until well combined. The egg helps bind the patties.

Divide the mixture into 4 equal portions and form each portion into a patty, about 1.5-2 cm thick.

Heat 10 ml of olive oil in a large non-stick skillet over medium heat.

Carefully place the patties in the skillet and cook for 4-6 minutes per side, or until golden brown and heated through.

While the patties are cooking, heat the remaining 10 ml of olive oil in a separate non-stick skillet over medium heat.

Crack the remaining 2 eggs into the skillet and cook to your desired doneness (e.g., sunny-side up, over easy).

Serve 2 patties per person, topped with a fried egg.
