cornmeal20 g
plain flour10 g
baking powder4 g

chili powder2 g
cumin1 g
garlic powder1 g
whole egg50 g
egg whites50 g
milk or water60 ml
cooked shredded chicken breast50 g
canned black beans, rinsed and drained50 g
red onion, finely chopped10 g
olive oil5 ml
salsa (for serving)30 g

Instructions

In a bowl, whisk together the protein powder, cornmeal, flour, baking powder, salt, chili powder, cumin, and garlic powder.

In a separate bowl, whisk the whole egg, egg whites, and milk/water until well combined.

Pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix.

Gently fold in the shredded chicken, black beans, and chopped red onion.

Heat the olive oil in a non-stick skillet over medium heat.

Pour portions of the batter into the skillet to form hotcakes (about 60-70g each, making 2-3 hotcakes).
