High-Protein Plant-Based Pancakes with Stewed Apples

Oat Flour80 g
Protein Powder40 g
Plant Milk200 ml
Egg100 g
Baking Powder8 g
Sweetener10 g
Oil10 ml
Apple300 g
Cinnamon4 g
Water60 ml

Instructions

Peel, core, and chop the apple into small pieces (3 minutes).

In a small saucepan, combine the chopped apple, cinnamon, and water. Bring to a simmer over medium heat. Cook, stirring occasionally, until the apples are soft and slightly broken down, about 7 minutes.

While apples cook, prepare the pancake batter. In a bowl, whisk together the oat flour, protein powder, baking powder, sweetener, and a pinch of salt (2 minutes).

In a separate bowl, whisk the egg and plant milk (1 minute).

Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix (1 minute).

Heat a non-stick pan or griddle over medium heat and add the oil. Once hot, pour spoonfuls of batter to form pancakes (1 minute).

Cook for 2-3 minutes per side, or until golden brown and cooked through (5 minutes).
