Ingredients (Serves 1)

Egg whites100 g
Whole egg50 g
Cooked chicken breast, shredded40 g
Canned black beans, rinsed and drained40 g
Whole wheat tortilla (small)35 g
Shredded cheese (cheddar or Mexican blend)15 g
Onion, finely diced10 g
Bell pepper, finely diced10 g
Olive oil3 ml
Salsa30 g
Salt1 g
Black pepper0.5 g

Instructions

Heat olive oil in a non-stick pan over medium heat.

Add diced onion and bell pepper and cook until softened, about 3-5 minutes.

Add shredded cooked chicken and black beans, cook for 1-2 minutes to warm through.

In a bowl, whisk together egg whites and whole egg with salt and pepper.

Pour eggs into the pan with the chicken and vegetables. Scramble until cooked through.

Warm the tortilla slightly in a dry pan or microwave until pliable.

Place the scrambled mixture in the center of the warm tortilla. Sprinkle with shredded cheese.

Add salsa.

Fold in the sides of the tortilla, then roll up tightly from the bottom to form a burrito.
