Egg1.5 unit
Feta cheese17.5 g
Courgette50 g
Tomato50 g
Onion12.5 g
Garlic0.3 clove
Olive Oil5 g
Spinach25 g
Nutritional Yeast5 g
Salt0.5 tsp
Black Pepper0.3 tsp
Oregano0.5 tsp

Instructions

Step 1: Dice the onion and mince the garlic. Chop the courgette and tomatoes into small pieces. Crumble the firm tofu.

Step 2: Heat olive oil in a large non-stick pan over medium heat. Add diced onion and cook for 3 minutes until softened.

Step 3: Add minced garlic, chopped courgette, and tomatoes. Sauté for 4 minutes until vegetables are slightly tender.

Step 4: Add crumbled tofu, spinach, nutritional yeast, salt, pepper, and oregano to the pan. Cook for 2 minutes, stirring to combine.

Step 5: Create wells in the tofu mixture and crack the eggs directly into them. Scramble the eggs into the mixture, cooking for 3 minutes until eggs are set. Stir in crumbled feta cheese just before serving.
