High Protein Mediterranean Scramble with Whole Wheat Toast

Egg White200 g
Egg60 g
Spinach100 g
Feta Cheese15 g
Olive Oil3 g
Whole Wheat Bread40 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Step 1: Roughly chop the spinach. In a bowl, whisk together the egg white and whole egg with a pinch of salt and black pepper.

Step 2: Heat olive oil in a non-stick pan over medium heat for 1 minute. Add the chopped spinach and sauté for 2 minutes until wilted.

Step 3: Pour the egg mixture into the pan. Stir gently as the eggs begin to set for 2-3 minutes. Just before the eggs are fully cooked, crumble in the feta cheese and gently fold it in. Cook for another 1 minute.

Step 4: While eggs cook, toast the whole wheat bread for 2-3 minutes. Serve the scrambled eggs immediately with the toast.
