Egg White200 g
Spinach100 g
Cherry Tomato50 g
Kalamata Olive10 g
Olive Oil3 g
Sourdough Bread40 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Step 1: Dice the cherry tomatoes and thinly slice the Kalamata olives. Chop the spinach if using large leaves.

Step 2: In a bowl, whisk together the whole eggs and egg whites. Season with salt and black pepper.

Step 3: Heat olive oil in a non-stick skillet over medium heat. Add the diced cherry tomatoes and sliced olives, sauté for 2 minutes.

Step 4: Add the spinach to the skillet and cook until wilted, about 1-2 minutes.

Step 5: Pour the egg mixture into the skillet. Scramble gently until cooked through but still moist, about 3-4 minutes.
