Instructions

Finely mince the chicken breast. Dice the onion, tomato, and green chili. Grate the ginger and garlic.

Heat oil in a non-stick pan over medium heat. Add diced onion and sauté for 3-4 minutes until softened.

Add grated ginger, garlic, and green chili. Sauté for 1 minute until fragrant.

Stir in minced chicken and cook for 4-5 minutes, breaking it up with a spoon, until it turns white and is nearly cooked through.

Add diced tomato, turmeric powder, cumin powder, coriander powder, garam masala, and salt. Cook for 3-4 minutes, stirring occasionally, until tomatoes soften and spices are fragrant.

In a small bowl, whisk the eggs. Pour the whisked eggs into the pan with the chicken and vegetables. Scramble until cooked to your desired consistency (2-3 minutes).
