Instructions

In a bowl, whisk the eggs with a pinch of salt and pepper.

Heat the olive oil in a non-stick pan over medium heat.

Add the spinach and sauté until wilted, about 1-2 minutes.

Pour in the whisked eggs. As the eggs begin to set, gently push them from the edges towards the center, allowing the uncooked egg to flow underneath.

Crumble in the feta cheese and scatter the sliced Kalamata olives over the eggs. Continue to scramble until the eggs are cooked to your desired consistency.
