Egg White6 piece
Turkey Breast50 g
Spinach45 g
Cherry Tomato140 g
Olive Oil7.5 ml
Whole-Grain Bread22.5 g
Mixed Berries75 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Dice the turkey breast into small pieces. Halve the cherry tomatoes and roughly chop the spinach.

In a non-stick pan, heat 5ml of olive oil over medium heat. Add the diced turkey and cook for 3-4 minutes until lightly browned.

Whisk the whole egg and egg whites in a bowl with a pinch of salt and pepper.

Add the spinach and cherry tomatoes to the pan with the turkey. Sauté for 2 minutes until spinach wilts.

Pour the egg mixture into the pan. Scramble gently until cooked through, about 3-4 minutes.

Toast the whole-grain bread. Serve the scramble alongside the toast and mixed berries.
