Egg White150 g
Smoked Ham50 g
Spinach100 g
Whole Grain Bread40 g
Olive Oil5 g

Instructions

Chop the smoked ham into small pieces. Roughly chop the spinach.

In a bowl, whisk together the whole eggs and egg whites. Season with salt and pepper.

Heat olive oil in a non-stick pan over medium heat. Add the ham and cook for 2 minutes until lightly browned.

Add the spinach to the pan and cook until wilted, about 1-2 minutes.

Pour the egg mixture into the pan. Stir gently with a spatula as the eggs set, scrambling until cooked through but still moist, about 3-4 minutes.
