High-Protein Chicken and Vegetable Rice Bowls

Ingredients (Serves 2)

raw chicken breast900 g
mixed stir-fry vegetables600 g
cooked rice600 g
dairy-free soy sauce60 ml
fresh ginger, minced10 g
garlic, minced10 g
cornstarch15 g
sesame oil10 g
cooking oil55 g
water50 ml
salt1 to taste
black pepper1 to taste

Instructions

Slice the chicken breast into thin strips.

In a small bowl, whisk together the soy sauce, minced ginger, minced garlic, cornstarch, and water. Set aside.

Heat 30g of cooking oil in a large wok or skillet over high heat.

Add the chicken strips and season with salt and pepper. Stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.

Add the remaining 25g of cooking oil to the wok.

Add the mixed stir-fry vegetables and stir-fry for 5-7 minutes until tender-crisp.

Return the cooked chicken to the wok with the vegetables.

Pour the prepared sauce over the chicken and vegetables. Stir well to coat and cook for 1-2 minutes until the sauce thickens.

Stir in the sesame oil.

Divide the cooked rice between two bowls.

Spoon the chicken and vegetable stir-fry over the rice.
