High-Protein Chicken and Vegetable Egg Scramble

Ingredients (Serves 2)

Cooked boneless, skinless chicken breast160 g
Large eggs3 pcs
Cooked brown rice150 g
Bell pepper (any color)100 g
Onion50 g
Fresh spinach50 g
Olive oil10 ml
Salt1 g
Black pepper0.5 g

Instructions

Dice the bell pepper and onion.

Heat olive oil in a large non-stick skillet over medium heat.

Add diced bell pepper and onion and cook until softened, about 5-7 minutes.

Add the cooked chicken and cooked brown rice to the skillet. Stir and cook for 2-3 minutes to heat through.

Add the fresh spinach and cook until wilted, about 1-2 minutes.

Push the chicken and vegetable mixture to one side of the skillet.

Crack the eggs into the empty side of the skillet. Scramble them with a spatula until cooked through.

Combine the scrambled eggs with the chicken and vegetable mixture.

Season with salt and black pepper. Stir well.

Serve immediately.
