fresh spinach100 g
unsweetened dairy-free milk60 ml
cooked rice150 g
olive oil3 g
salt1 to taste
black pepper1 to taste

Instructions

In a bowl, whisk together the eggs, dairy-free milk, salt, and pepper.

Heat olive oil in a non-stick pan over medium heat.

Add the cooked shredded chicken and spinach to the pan. Cook for 2-3 minutes until the spinach is wilted.

Pour the egg mixture over the chicken and spinach.

Cook the omelet for 3-4 minutes, until the edges are set. Carefully fold the omelet in half.
