High Protein Chicken and Rice Patties

Ingredients (Serves 1)

cooked chicken breast, diced100 g
cooked rice80 g
egg, whole, raw70 g
onion, chopped15 g
bell pepper, chopped15 g
olive oil5 ml
salt0.5 g
black pepper0.5 g

Instructions

Heat 2 ml of olive oil in a small pan over medium heat.

Add the chopped onion and bell pepper and sauté for 3-4 minutes until softened. Let cool slightly.

In a bowl, combine the diced cooked chicken, cooked rice, sautéed vegetables, raw egg, salt, and black pepper.

Mix everything thoroughly until well combined.

Form the mixture into 2-3 small patties.

Heat the remaining 3 ml of olive oil in a non-stick pan over medium heat.

Carefully place the patties in the pan and cook for 6-8 minutes per side, or until golden brown and heated through.
