High Protein Chicken and Egg Scramble with Rice and Vegetables

Ingredients (Serves 1)

cooked chicken breast, diced170 g
egg, whole, raw4 pcs
cooked rice20 g
onion, chopped40 g
bell pepper, sliced20 g
broccoli florets30 g
garlic, minced5 g
olive oil5 ml
salt1 g
black pepper0.5 g

Instructions

Heat olive oil in a non-stick skillet over medium heat.

Add chopped onion, sliced bell pepper, and broccoli florets. Sauté for 5-7 minutes until vegetables are slightly tender.

Add minced garlic and cooked diced chicken. Cook for 2-3 minutes until heated through.

In a separate bowl, whisk the eggs with salt and pepper.

Push the chicken and vegetables to one side of the skillet. Pour the whisked eggs into the other side.

Scramble the eggs, gently mixing them with the chicken and vegetables as they cook.

Once eggs are cooked through, stir in the cooked rice.
