High-Protein Chicken and Egg Rice Bowl

Ingredients (Serves 2)

Cooked boneless, skinless chicken breast250 g
Large eggs4 pcs
Cooked brown rice200 g
Bell pepper (any color)150 g
Onion100 g
Fresh spinach80 g
Olive oil15 ml
Garlic powder2 g
Onion powder2 g
Salt1 g
Black pepper0.5 g

Instructions

Dice the cooked chicken, bell pepper, and onion into bite-sized pieces.

Heat the olive oil in a large skillet or wok over medium-high heat.

Add the diced onion and bell pepper and cook until softened, about 5-7 minutes.

Stir in the garlic powder and onion powder and cook for 30 seconds until fragrant.

Add the cooked chicken and spinach to the skillet. Cook, stirring, until the spinach wilts.

Push the chicken and vegetable mixture to one side of the skillet. Crack the eggs into the empty side.

Scramble the eggs until cooked through, breaking them up with a spatula.

Add the cooked brown rice to the skillet. Season the entire mixture with salt and pepper.
