High-Protein Beef and Vegetable Tacos

Ingredients (Serves 2)

Sirloin steak (raw)215 g
Corn tortillas150 g
Onion75 g
Bell pepper75 g
Green beans75 g
Corn (canned or frozen)75 g
Olive oil9 ml
Cumin2 g
Chili powder2 g
Garlic powder2 g
Salt1 g
Black pepper1 g
Salsa50 g
Fresh cilantro10 g
Lime10 ml

Instructions

Slice the sirloin steak against the grain into thin strips.

Toss steak strips with half of the cumin, chili powder, garlic powder, salt, and pepper. Let marinate for at least 15 minutes (or up to 30 minutes in the refrigerator).

Slice the onion, bell pepper, and green beans. Have corn ready.

Heat olive oil in a large skillet or wok over medium-high heat.

Add the marinated steak strips and stir-fry until browned and cooked through, about 5-7 minutes. Remove steak from the skillet and set aside.

Add the sliced onion, bell pepper, green beans, and corn to the same skillet. Add the remaining cumin, chili powder, garlic powder, salt, and pepper. Stir-fry until vegetables are tender-crisp, about 5-7 minutes.

Return the cooked steak to the skillet and toss to combine with the vegetables. Squeeze fresh lime juice over the mixture.

Warm the corn tortillas according to package instructions.

Divide the steak and vegetable mixture evenly among the warm tortillas.

Top with salsa and fresh cilantro before serving.
