High-Protein Beef and Potato Hash with Spinach

Ingredients (Serves 3)

lean beef sirloin/flank steak90 g
potatoes100 g
yellow onion30 g
bell pepper (any color)30 g
fresh spinach50 g
cooking oil5 ml
dried herbs (e.g., rosemary, thyme)1 g
salt0.5 g
black pepper0.2 g

Instructions

Dice the beef into small cubes (about 1 cm). Season with half of the dried herbs, salt, and pepper.

Dice the potatoes into small cubes (about 1 cm). Par-boil or microwave potatoes for 3-4 minutes until slightly tender, then drain well.

Finely chop the yellow onion and dice the bell pepper.

Heat the cooking oil in a large pan or skillet over medium-high heat.

Add the beef and cook for 3-4 minutes until browned on all sides. Remove beef from the pan and set aside.

Add the par-boiled potatoes, onion, and bell pepper to the same pan. Cook, stirring occasionally, for 10-12 minutes, or until potatoes are golden brown and slightly crispy.

Add the cooked beef back to the pan along with the remaining dried herbs. Stir to combine.

Add the fresh spinach and cook for 2-3 minutes, or until wilted.

Taste and adjust seasoning if needed. Serve hot.
