Halloumi Cheese40 g
Bell Pepper80 g
Red Onion40 g
Cherry Tomatoes40 g
Olive Oil5 ml
Whole Wheat Pita Bread40 g
Greek Yogurt40 g
Cucumber40 g
Garlic4 g
Fresh Dill4 g
Lemon Juice4 ml

Dried Oregano2 g

Instructions

Step 1: Prepare the Tzatziki: Grate the cucumber and squeeze out excess water. Mince the garlic. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped fresh dill, lemon juice, a pinch of salt, and pepper. Stir well and set aside.

Step 2: Prepare the skewers: Cut the chicken breast and halloumi cheese into 2 cm cubes. Core and chop the bell pepper into similar-sized pieces. Cut the red onion into wedges. Thread chicken, halloumi, bell pepper, red onion, and cherry tomatoes alternately onto two skewers.

Step 3: Season and cook: Drizzle the skewers with olive oil, sprinkle with dried oregano, salt, and pepper. Heat a grill pan or large skillet over medium-high heat. Cook the skewers for 6-8 minutes, turning occasionally, until the chicken is cooked through and the halloumi is golden brown.

Step 4: Warm the pita: While skewers are cooking, lightly toast the whole wheat pita bread in a dry pan or toaster.

Step 5: Serve: Serve the hot skewers with the homemade tzatziki and warm pita bread on the side.
