Ingredients (Serves 3)

Lean Beef Sirloin/Flank Steak250 g
Brown Rice (dry)60 g
Yellow Onion75 g
Bell Pepper (any color)75 g
Fresh Spinach75 g
Garlic15 g
Soy Sauce (or tamari)20 ml
Rice Vinegar10 ml
Toasted Sesame Oil5 ml
Cooking Oil (e.g., vegetable or avocado)10 ml
Cornstarch5 g
Water15 ml
Salt1 g
Black Pepper0.5 g

Instructions

Cook brown rice according to package instructions. Keep warm.

Thinly slice beef against the grain. Slice onion and bell pepper into strips. Mince garlic.

In a small bowl, whisk together soy sauce (or tamari), rice vinegar, toasted sesame oil, cornstarch, and water to make the sauce.

Heat cooking oil in a large skillet or wok over high heat.

Add beef strips and stir-fry quickly until browned on all sides (do not overcrowd the pan, cook in batches if necessary). Remove beef from the pan and set aside.

Add onion and bell pepper to the pan and stir-fry for 3-4 minutes until slightly tender-crisp.

Add minced garlic and stir-fry for 30 seconds until fragrant.

Return beef to the pan. Add fresh spinach and stir-fry for 1-2 minutes until wilted.

Pour the prepared sauce over the stir-fry and stir quickly until the sauce thickens and coats the ingredients.

Season with salt and pepper to taste.
