Spinach75 g
Onion15 g
Olive Oil2.5 ml
Whole-grain bread40 g
Cottage Cheese25 g
Fresh Parsley2.5 g
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Finely dice the onion and roughly chop the fresh spinach and parsley.

In a medium non-stick pan, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until softened.

Add the spinach to the pan and cook until wilted, about 1-2 minutes.

In a bowl, whisk the eggs with salt and pepper. Pour the egg mixture into the pan with the vegetables.

As the eggs begin to set, gently push them from the edges to the center, scrambling until cooked through but still moist, about 3-4 minutes.

Stir in the cottage cheese and fresh parsley. Serve immediately with a slice of whole-grain toast per person.
