1. Finely dice the onion and bell pepper. Set aside.

2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 7-8 minutes. Drain excess fat and season with cumin, chili powder, garlic powder, salt, and black pepper. Remove beef from skillet and set aside.

3. In the same skillet, add the remaining olive oil. Add the diced onion and bell pepper and sauté until softened, about 5-7 minutes. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove vegetables from skillet and set aside.

4. In a separate bowl, whisk the eggs with a pinch of salt and pepper. Heat a non-stick pan over medium heat. Pour in the whisked eggs and scramble gently until just set but still moist, about 3-4 minutes.
