Ingredients (Serves 3)

Avocado47 g
Bell Pepper33 g
Onion17 g
Spinach25 g
Olive Oil1.7 ml
Salsa17 g
Cumin0.3 tsp
Chili Powder0.3 tsp
Garlic Powder0.2 tsp
Salt0.3 tsp
Black Pepper0.2 tsp

Instructions

1. Finely dice the onion and bell pepper. Set aside.

2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 7-8 minutes. Drain excess fat and season with cumin, chili powder, garlic powder, salt, and black pepper. Remove beef from skillet and set aside.

3. In the same skillet, add the remaining olive oil. Add the diced onion and bell pepper and sauté until softened, about 5-7 minutes. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove vegetables from skillet and set aside.

4. In a separate bowl, whisk the eggs with a pinch of salt and pepper. Heat a non-stick pan over medium heat. Pour in the whisked eggs and scramble gently until just set but still moist, about 3-4 minutes.

5. Carefully halve and pit the avocado, then thinly slice or dice it.

6. To assemble, divide the seasoned ground beef, sautéed vegetables, and scrambled eggs evenly among three bowls. Top each bowl with sliced avocado and a dollop of salsa. Serve immediately.
