Ingredients (Serves 2)

Extra-lean ground beef200 g
Broccoli florets150 g
Carrots (sliced)50 g
Bell pepper (sliced)50 g
Onion (sliced)50 g
Garlic (minced)5 g
Fresh ginger (grated)5 g
Soy sauce or tamari30 ml
Honey or maple syrup15 ml
Cornstarch5 g
Water60 ml
Oil (e.g., sesame or vegetable)8 ml
Dry rice100 g
Salt0.5 g
Black pepper0.5 g

Instructions

Cook the dry rice according to package instructions. Set aside.

In a small bowl, whisk together the soy sauce or tamari, honey or maple syrup, cornstarch, and water. Set the sauce aside.

Heat oil in a large pan or wok over medium-high heat.

Add the minced garlic and grated ginger and stir-fry for about 30 seconds until fragrant.

Add the extra-lean ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat if necessary.

Add the sliced onion, bell pepper, and carrots to the pan. Stir-fry for 3-4 minutes until slightly softened.

Add the broccoli florets and stir-fry for another 3-5 minutes, until the broccoli is tender-crisp.

Pour the prepared sauce over the beef and vegetables. Stir constantly until the sauce thickens and coats everything, about 1-2 minutes.

Season with salt and black pepper to taste.
