Halloumi Cheese50 g
Watermelon150 g
Fresh Mint7.5 g
Lime Juice10 ml
Olive Oil12.5 ml
Honey2.5 ml
Salt0.5 g

Instructions

Cut halloumi cheese into 1.5 cm cubes and watermelon into slightly larger 2 cm cubes. Thread alternating halloumi and watermelon cubes onto wooden skewers, leaving a small space between each piece.

Heat a non-stick skillet over medium-high heat. Add 10ml olive oil. Carefully place the halloumi skewers in the hot pan and sear for 2-3 minutes per side until halloumi is golden brown and crispy. Ensure even browning on all sides.

While halloumi sears, prepare the vinaigrette. Finely chop fresh mint. In a small bowl, combine lime juice, remaining 40ml olive oil, honey, salt, and black pepper. Whisk vigorously for 1-2 minutes until the dressing is well emulsified and slightly thickened. Taste and adjust seasoning for a perfect balance of tart, sweet, and savory.
