Butter10 g
Hard Cheese15 g

Instructions

Step 1: Dice the beef belly into small, uniform pieces. Grate the hard cheese. Crack the eggs into a bowl and season lightly with salt, whisking gently.

Step 2: Heat a non-stick pan over medium-low heat. Add the diced beef belly and render slowly for 8-10 minutes until the fat has melted and the beef pieces are golden brown and crispy. Remove the crispy beef bits with a slotted spoon and set aside, leaving the rendered fat in the pan.

Step 3: Add the butter to the pan with the rendered beef fat. Once melted, pour in the whisked eggs. Cook for 3-4 minutes, continuously stirring and scraping the bottom of the pan with a spatula to create soft curds. Do not overcook; the eggs should still be slightly moist.

Step 4: Gently fold in the crispy beef belly bits and most of the grated hard cheese into the scrambled eggs. Serve immediately, garnished with the remaining grated cheese.
