Creamy Coconut Beef and Broccoli Pasta

Ingredients (Serves 2)

Beef steak (sirloin or flank)150 g
Pasta (dry)60 g
Broccoli florets100 g
Onion40 g
Garlic (minced)5 g
Olive oil8 ml
Canned coconut milk (full-fat, dairy-free)150 ml
Soy sauce (dairy-free)10 ml
Cornstarch5 g
Water or broth15 ml
Salt1 g
Black pepper (freshly ground)0.5 g

Instructions

Bring a large pot of salted water to a boil for the pasta. Cook pasta according to package directions until al dente. Drain and set aside.

While pasta cooks, slice the beef steak thinly against the grain.

Heat olive oil in a large pan or skillet over medium-high heat.

Add sliced beef and cook for 3-4 minutes until browned. Remove beef from the pan and set aside.

Add diced onion, broccoli florets, and garlic to the same pan. Sauté for 5-7 minutes until vegetables are tender-crisp.

In a small bowl, whisk together cornstarch and water or broth to create a slurry.

Pour the canned coconut milk and soy sauce into the pan with the vegetables. Bring to a gentle simmer.

Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens.

Return the cooked beef to the pan. Stir to coat in the sauce.

Add the cooked pasta to the pan and toss gently to combine everything.
