Quick Shrimp & Herb Fresh Rolls

Ingredients (Serves 1)

Rice Paper Wrapper2 sheets
Shrimp80 g
Lettuce20 g
Cucumber20 g
Fresh Mint5 g
Fresh Cilantro5 g
Rice Vermicelli Noodle10 g
Hoisin Sauce0.5 tbsp
Peanut Butter0.3 tbsp

Instructions

If using raw shrimp, quickly boil or steam until cooked, then slice in half lengthwise. If using cooked shrimp, thaw if frozen.

Thinly slice cucumber into matchsticks. Wash and tear lettuce leaves into smaller pieces. Roughly chop fresh mint and cilantro.

Boil a small amount of water for the vermicelli noodles. Cook noodles according to package directions (usually 2-3 minutes for thin vermicelli), then drain and rinse with cold water.

Prepare the dipping sauce: In a small bowl, whisk together hoisin sauce and peanut butter with 1-2 tablespoons of warm water until smooth.

To assemble: Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for 10-15 seconds until pliable. Lay it flat on a clean surface.

Arrange a few pieces of lettuce, cucumber, a small pinch of vermicelli, a few shrimp halves, and some mint and cilantro near the bottom edge of the wrapper. Fold the bottom edge over the filling, then fold in the sides. Roll tightly from bottom to top to form a spring roll.

Repeat for the second roll. Serve immediately with the peanut dipping sauce.
