Step 1
Peel and dice the celeriac (300 g) into small cubes (approx. 1 cm). Mince the garlic (10 g). Dice the chicken breast (300 g) into 2-3 cm pieces. (5 minutes)
Step 2
Place diced celeriac in a small pot, cover with water, add a pinch of salt, and bring to a boil. Cook for 5-7 minutes until very tender. (2 minutes for boiling, 5 minutes cooking time)
Step 3
While celeriac cooks, heat half of the olive oil (10 ml) in a large skillet over medium-high heat. Add chicken pieces and season with salt and pepper. Sear for 3-4 minutes until golden brown and cooked through, stirring occasionally. Remove chicken from skillet and set aside. (4 minutes)
Step 4
Drain the cooked celeriac, then mash it with a fork or potato masher until smooth. Stir in a splash of vegetable broth (60 ml) and season with salt and pepper. (2 minutes)
Step 5
In the same skillet, add the remaining olive oil (10 ml) and minced garlic. Sauté for 30 seconds until fragrant. Add spinach (200 g) and cook for 1-2 minutes until wilted. (2 minutes)
