Italian Turkey Meatball & Zucchini Noodle Skillet with Marinara

Ingredients (Serves 1)

Lean Ground Turkey150 g
Zucchini250 g
Canned Crushed Tomatoes200 g
Onion50 g
Garlic10 g
Olive Oil21 g
Whole Grain Pasta50 g
Italian Seasoning5 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Bring a small pot of salted water to a boil for the pasta. Cook the whole grain pasta according to package directions.

While pasta cooks, finely chop the onion and mince the garlic.

In a bowl, combine the lean ground turkey with half of the Italian seasoning, salt, and pepper. Form into small meatballs (about 1-inch diameter).

Heat 1 tbsp (approx. 14g) of olive oil in a large skillet over medium-high heat. Add the meatballs and brown on all sides, about 5-7 minutes. Remove meatballs from skillet and set aside.

Add the remaining 0.5 tbsp (approx. 7g) of olive oil to the skillet. Sauté the chopped onion for 2-3 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.

Pour in the crushed tomatoes and the remaining Italian seasoning. Bring to a simmer. Return the meatballs to the skillet, reduce heat to low, and let simmer for 5-7 minutes, or until meatballs are cooked through.

While the sauce simmers, use a spiralizer or vegetable peeler to create zucchini noodles.

Drain the cooked pasta.

Serve the turkey meatballs and marinara sauce over the zucchini noodles, with the whole grain pasta on the side.
