Buckwheat Blini with Smoked Salmon and Dill Cream Cheese

Ingredients (Serves 2)

Buckwheat Flour15 g
Milk30 ml
Egg0.5 unit
Baking Powder0.3 tsp
Smoked Salmon25 g
Cream Cheese20 g
Dill1.5 g
Olive Oil1.5 ml

Instructions

In a bowl, whisk together buckwheat flour, milk, egg, and baking powder until smooth. Season with a pinch of salt.

Heat a non-stick pan over medium heat and lightly grease with olive oil. Pour small dollops of batter (approx. 2 tbsp each) to form blini.

Cook for 1-2 minutes per side, or until golden brown and cooked through. Transfer to a plate and repeat with remaining batter.

In a separate small bowl, mix cream cheese with finely chopped fresh dill. Season with a pinch of salt and pepper.

Spread a dollop of dill cream cheese on each blini and top with a piece of smoked salmon. Serve warm or at room temperature.
