Black Pepper Beef and Broccoli Stir-fry with Rice

Ingredients (Serves 2)

Beef steak (sirloin or flank)200 g
Broccoli florets150 g
White rice (cooked)200 g
Onion40 g
Garlic7 g
Ginger (fresh, grated)5 g
Soy sauce (dairy-free)20 ml
Rice vinegar10 ml
Sesame oil5 ml
Cornstarch5 g
Black pepper (freshly ground)3 g
Olive oil10 ml
Water or beef broth30 ml

Instructions

Slice the beef steak against the grain into thin strips.

In a small bowl, combine 20 ml soy sauce, 10 ml rice vinegar, 5 ml sesame oil, 5 g cornstarch, and 3 g black pepper. Add the beef strips and marinate for at least 15 minutes.

Prepare the sauce: In another small bowl, whisk together the remaining 20 ml soy sauce, 10 ml rice vinegar, 5 ml sesame oil, remaining 5 g cornstarch, remaining 3 g black pepper, and 60 ml water or beef broth. Set aside.

Chop the onion. Mince the garlic and grate the ginger.

Heat 10 ml olive oil in a large wok or skillet over high heat until very hot.

Add the marinated beef in a single layer (cook in batches if necessary to avoid crowding) and sear for 1-2 minutes per side until browned. Remove beef from the pan and set aside.

Add the remaining 10 ml olive oil to the wok. Add the chopped onion and stir-fry for 2-3 minutes until softened.

Add the garlic and ginger and stir-fry for 30 seconds until fragrant.

Add the broccoli florets and stir-fry for 3-5 minutes until tender-crisp.

Push the vegetables to the side, re-whisk the prepared sauce, and pour it into the center of the wok. Cook, stirring, until the sauce thickens.

Return the cooked beef to the wok. Toss everything together to coat with the sauce.

Serve immediately over steamed white rice.
