Black Bean and Cheese Quesadilla

Ingredients (Serves 1)

Tortillas50 g
Beans100 g
Cheese40 g
Onion20 g
Garlic3 g
Oil5 ml
Cumin1 g
Chili Powder1 g
Salt1 g
Salsa50 g

Instructions

Finely chop the onion (20 g) and mince the garlic (3 g). (2 minutes)

Heat oil (5 ml) in a small pan over medium heat. Add onion and garlic and sauté until softened, about 3 minutes. (3 minutes)

Add the beans (100 g), cumin (1 g), chili powder (1 g), and salt (1 g) to the pan. Mash slightly with a fork and cook for 3 minutes, stirring occasionally. (3 minutes)

Lay one tortilla flat. Spread the bean mixture over half of the tortilla. Sprinkle the cheese (40 g) over the beans. (2 minutes)

Fold the other half of the tortilla over the filling. (1 minute)

Heat a dry pan or griddle over medium heat. Carefully place the quesadilla in the pan. Cook for 4-5 minutes per side, until golden brown and the cheese is melted. (10 minutes)

Remove from pan, slice, and serve immediately with salsa (50 g). (1 minute)
