Beef, Broccoli, and Bell Pepper Pasta with Garlic-Ginger Sauce

Ingredients (Serves 2)

beef steak (sirloin or flank)200 g
pasta (dry)75 g
broccoli florets120 g
bell pepper80 g
onion60 g
garlic10 g
fresh ginger8 g
soy sauce (dairy-free)20 ml
rice vinegar10 ml
olive oil10 ml
cornstarch5 g
water or broth30 ml
salt0 g
black pepper0 g

Instructions

Cook the pasta according to package directions in a large pot of salted boiling water. Drain, reserving about 100ml of pasta water.

While pasta cooks, slice the beef steak against the grain into thin strips.

In a small bowl, whisk together the soy sauce, rice vinegar, minced garlic, grated ginger, cornstarch, and water or broth. Set aside.

Dice the onion and bell pepper into bite-sized pieces. Break broccoli into smaller florets if needed.

Heat olive oil in a large skillet or wok over high heat.

Add the beef strips and stir-fry for 2-3 minutes until browned. Remove beef from the skillet and set aside.

Add the onion, bell pepper, and broccoli to the same skillet. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Return the beef to the skillet.

Pour the prepared sauce over the beef and vegetables. Stir constantly until the sauce thickens and coats everything, about 1-2 minutes.

Add the drained pasta to the skillet. Toss to combine, adding a little reserved pasta water if needed to create a light sauce.

Season with salt and black pepper to taste.
