Beef and Veggie Quinoa Bowl

Ingredients (Serves 2)

lean beef (sirloin or flank steak), thinly sliced5 oz
dry quinoa0.5 cup
water or vegetable broth1 cup
frozen mixed vegetables1.5 cup
medium onion, diced0.3 cup
garlic cloves, minced1 pcs
dairy-free soy sauce1.5 tbsp
rice vinegar0.5 tbsp
olive oil0.5 tbsp

Instructions

Rinse the dry quinoa under cold water using a fine-mesh sieve.

Combine the rinsed quinoa and water or vegetable broth in a small saucepan. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes, or until liquid is absorbed and quinoa is cooked and fluffy.

While quinoa cooks, prepare the sauce by whisking together the dairy-free soy sauce and rice vinegar in a small bowl.

Heat olive oil in a large skillet or wok over medium-high heat.

Add the thinly sliced lean beef and cook, stirring frequently, until browned.

Add the diced medium onion and minced garlic to the skillet with the beef. Cook until onion is softened and translucent, about 3-4 minutes.

Add the frozen mixed vegetables to the skillet. Cook, stirring occasionally, until vegetables are heated through and tender-crisp.

Pour the prepared sauce over the beef and vegetables. Stir to combine and cook for another 1-2 minutes.

Divide the cooked quinoa between two bowls. Spoon the beef and vegetable mixture over the quinoa.
