Beef and Vegetable Stir-fry with Rice

Ingredients (Serves 2)

beef flank steak600 g
mixed stir-fry vegetables400 g
cooked rice500 g
dairy-free soy sauce40 ml
fresh ginger, minced10 g
garlic, minced20 g
onion100 g
olive oil20 ml
salt3 g
black pepper1 g

Instructions

Slice the beef flank steak against the grain into thin strips.

In a bowl, combine beef strips with 20ml of the soy sauce, half of the minced ginger, half of the minced garlic, 1g salt, and 0.5g black pepper. Let marinate for at least 15 minutes while you prepare the vegetables.

Cut the onion into slices or wedges.

Heat olive oil in a large skillet or wok over high heat.

Add the marinated beef strips and stir-fry quickly until browned on all sides and cooked through, about 3-5 minutes. Remove beef from the pan and set aside.

Add the sliced onion, remaining minced ginger, and remaining minced garlic to the hot pan. Stir-fry for 1-2 minutes until fragrant.

Add the mixed stir-fry vegetables to the pan. Stir-fry for 5-7 minutes until vegetables are tender-crisp.

Return the cooked beef to the pan with the vegetables.

Pour in the remaining 20ml soy sauce, 2g salt, and 0.5g black pepper. Stir to combine and heat through.

Serve the beef and vegetable stir-fry immediately over the cooked rice.
