Baked Salmon with Roasted Broccoli and Quinoa

Salmon Fillet120 g
Broccoli Florets150 g
Olive Oil10 ml
Quinoa (dry)60 g
Water or Vegetable Broth120 ml
Salt1 pinch
Black Pepper1 pinch
Lemon Wedge (optional)1 item

Instructions

Preheat oven to 200°C (180°C Fan/Gas Mark 6).

Toss broccoli florets with half of the olive oil, salt, and pepper on a baking sheet. Spread in a single layer.

Place the salmon fillet on the same baking sheet. Drizzle with the remaining olive oil and season with salt and pepper.

Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily, and the broccoli is tender-crisp.

While the salmon and broccoli are baking, cook the quinoa according to package directions (typically simmer quinoa in water or broth for 15-20 minutes until liquid is absorbed).

Serve the baked salmon and roasted broccoli alongside the cooked quinoa. Squeeze lemon over salmon if desired.
