American Style Keto Power Scramble with Herbed Sausage, Caramelized Onions, and Chipotle Avocado Cream

Onion33 g
Bell Pepper50 g
Spinach50 g
Avocado17 g
Greek Yogurt7 g
Lime Juice3 ml
Chipotle Powder0.5 tsp
Olive Oil1 ml
Salt1 pinch
Black Pepper0.5 pinch
Dried Oregano0.5 tsp

Instructions

In a small bowl, whisk together the eggs with a pinch of salt and pepper. Set aside.

Thinly slice the onion and bell pepper. Mince the garlic cloves. In a separate bowl, mash the avocado with Greek yogurt, lime juice, and chipotle powder until smooth. Season with a pinch of salt. Set aside.

In a large non-stick skillet over medium-low heat, add 1ml of olive oil. Add the sliced onions and cook slowly for 8-10 minutes, stirring occasionally, until deeply golden and caramelized. Remove from skillet and set aside.

Increase heat to medium. Add the ground pork sausage to the same skillet, breaking it up with a spoon. Cook for 5 minutes until browned and cooked through. Drain any excess fat.

Add the sliced bell pepper and spinach to the skillet with the sausage. Sauté for 3 minutes until spinach is wilted and peppers are slightly tender-crisp.

Pour the whisked eggs over the sausage and vegetable mixture. Scramble gently for 2-3 minutes until cooked to your desired consistency.

Divide the scrambled mixture among 3 plates. Top each serving with a portion of the caramelized onions and a generous dollop of chipotle avocado cream. Garnish with a sprinkle of dried oregano and a pinch of chili flakes if desired. Serve immediately.
