Instructions

Step 1: Dice the onion and bell pepper. Roughly chop the spinach.

Step 2: Heat 5ml of olive oil in a large skillet over medium-high heat. Add the ground beef and cook for 8 minutes, breaking it apart, until browned. Drain any excess fat.

Step 3: Add the diced onion and bell pepper to the skillet with the beef. Sauté for 5 minutes until softened. Stir in the garlic powder and paprika.

Step 4: Create three wells in the beef mixture. Crack one egg into each well (or split the 5 eggs as desired). Cover the skillet and cook for 5-7 minutes, or until the egg whites are set and yolks are to your desired doneness.

Step 5: Sprinkle the chopped spinach over the skillet, allowing it to wilt for 1-2 minutes. Top with shredded cheddar cheese. Cover again briefly until the cheese is melted. Season generously with salt and black pepper.
