Vietnamese Turmeric Tofu Scramble with Herbs

Ingredients (Serves 1)

Firm Tofu250 g
Onion30 g
Garlic5 g
Turmeric Powder3 g
Fish Sauce15 ml
Cooking Oil10 ml
Scallion10 g
Cilantro5 g

Instructions

Drain and press the firm tofu to remove excess water, then crumble it into small pieces.

Finely chop the onion and garlic. Thinly slice the scallion and roughly chop the cilantro.

Heat cooking oil in a non-stick pan over medium heat. Add chopped onion and garlic, sauté for 2-3 minutes until fragrant.

Add crumbled tofu and turmeric powder to the pan. Stir well to coat the tofu evenly with turmeric. Cook for 5 minutes, stirring occasionally, until tofu is heated through and slightly golden.

Stir in the fish sauce. Remove from heat and mix in scallion and cilantro.

Serve immediately.
