Vietnamese Savory Rice Porridge with Mushrooms, Tofu & Herbs

Ingredients
- Jasmine Rice30 g
- Firm Tofu250 g
- Fish Sauce10 ml
- Green Onion10 g
- Sesame Oil5 ml
- Water400 ml
- Shiitake Mushroom100 g
- Ginger10 g
- Cilantro5 g
- Soy Sauce5 ml
Instructions

Rinse jasmine rice thoroughly. In a small saucepan, combine rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 5 minutes.

While rice simmers, drain and crumble the firm tofu. Slice the shiitake mushrooms thinly. Mince the ginger.

Add crumbled tofu, sliced mushrooms, and minced ginger to the simmering rice. Stir gently. Continue to simmer, uncovered, for another 2 minutes, stirring occasionally, until porridge reaches desired consistency.

Stir in fish sauce and soy sauce. Ladle into a bowl. Garnish with chopped green onion and fresh cilantro. Drizzle with sesame oil before serving.
