Mung Bean100 g
Ground Chicken100 g
Rice Flour20 g
Mushroom50 g
Spring Onion10 g
Cilantro5 g
Garlic5 g
Fish Sauce10 ml
Black Pepper1 g
Cooking Oil5 ml

Instructions

If using dried mung beans, soak them for at least 30 minutes, then boil until tender (about 15-20 minutes). Drain well and mash slightly.

Finely mince the garlic and roughly chop the mushrooms, spring onion, and cilantro.

In a bowl, combine the mashed mung beans, ground chicken, rice flour, minced garlic, chopped mushrooms, 5g of chopped spring onion, and 3g of chopped cilantro. Add the fish sauce and black pepper. Mix thoroughly to combine.

Form the mixture into 2-3 small patties.

Heat the cooking oil in a non-stick pan over medium heat.

Carefully place the patties in the hot pan and cook for 3-4 minutes per side, or until golden brown and cooked through.

Garnish with the remaining fresh spring onion and cilantro before serving.
