Vietnamese Fish Porridge (Cháo Cá)

Ingredients (Serves 1)

Tilapia Fillet150 g
Rice50 g
Chicken Broth300 ml
Ginger10 g
Spring Onion15 g
Cilantro5 g
Fish Sauce15 ml
White Pepper0.5 tsp
Sesame Oil5 ml

Instructions

Rinse rice thoroughly. In a medium saucepan, combine rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes until rice is tender (or use pre-cooked rice and heat with broth).

While rice simmers, slice tilapia fillets into thin pieces. Thinly slice ginger.

Add tilapia and sliced ginger to the simmering porridge. Cook for 3-4 minutes, or until fish is opaque and cooked through.

Stir in fish sauce, white pepper, and sesame oil. Taste and adjust seasoning.

Garnish with chopped spring onion and fresh cilantro before serving.
